I was just wondering what time does the Minecraft world map get updated?

Sometime between 2:30am and 5am, Wol will be able to tell you the actual time it updates

The render kicks off around 3am, not sure what time it finishes though.

2:49 it starts. Usually takes a cupla hours, so finishes some point around 5 as trax says.

It should be updated daily though. However I have noticed that if you dont properly refresh the page (control f5'ed it), then you can sometimes end up seeing older tiles instead that havent updated.
